DL's Duck with Marmalade Glaze / Dipping Sauce

1 duckling, thawed
1 tsp. each salt and pepper
4 oranges, peeled and sectioned
1 jar marmalade (16 oz)
1 can mandarin oranges (16 oz), drained, reserve juice

Prick the skin of the duck all over with a fork to allow grease to escape. 
Mix salt and pepper, and sprinkle all over duck and inside cavity.
Stuff cavity with orange sections.

Bake at 450F for 45 minutes.

Mix 1/2 of marmalade with 1/2 of the mandarin oranges.  Add a bit of the juice 'till still stiff, but easy to pour.  Baste back and legs of duck, using all of the mixture.

Bake at 375F 'till the thermometer pops -about an hour or hour and a half.

Mix remainder of mandarin oranges and remainder of marmalade (in a new dish) with a bit more of the juice.  Serve in individual dishes for dipping.  Serves 4.

It sounds very tasty and very simple.  Duck is a little hard to find for me but a chicken might enjoy this too.

I just tried it on chicken a few days ago.  It was good, although maybe a bit too sweet.  Orange juice would probably be better than the mandarin juice.

Hi DL,
just in case you have been wondering.I didn't serve your
mouth watering duckling recipe for Christmas.
It will be on our dinner table for New Years Day though.

I'm cooking two ducklings.Your marmalade glazed recipe and my old
traditional recipe.DS has diabetes(since he was 11 months old)
and I don't really want to change your recipe
to meet DS's dietary needs.
Hence two ducklings for New Years Day dinner.

The ducklings will be cooked in my clay bakers.

If we have one of our power outages I can finish baking
the ducklings on our BBQ.
I had to finish baking my banana bread on the BBQ
a few weeks ago,but that is another story.

I have two of those clay bakers -absolutely love 'em.  I need to buy another, big enough for a duck or maybe even a turkey. Smiley
