Since no one has ever posted to this section, I guess I'll take the honors. Smiley

This is a favorite recipe in my family, and my own invention.  It was invented on-the-fly to accomodate several unexpected guests with just the stuff I happened to have on hand. Smiley

2 lbs ground beef

About 1 cup (altogether) of finely chopped cookable veggies* (we like onions, bell peppers, broccolli flourets, and celery)

1 pkg of stuffing mix (I like the Stove Top kind, with the seperate seasoning bag)

1 can cream of celery soup (cream of mushroom is good, too, but my kids don't like it)

2 tablespoons of steak sauce

Make the ground beef into fairly large patties.  Flatten the patty out as far as possible, then push the center down into your palm to make a cup shape.

Fill the 'cup' with a small amount of the stuffing mix, and a small amount of each of the veggies.  Then fold the edges of the patty inward, so you can seal it into a stuffed ball.  If you want, press an onion ring or a slice of mushroom or something into the top of the ball for a garnish.

In a large oven-safe dish, mix the mushroom soup (undiluted) and the steak sauce.  If your stuffing mix has a seperate seasoning packet, add it to the soup mixture.

Arrange the stuffed balls into a single layer in the soup -leave a little space between them so they'll be evenly cooked.

Bake at 350 F for about 45 minutes.
