Microwave Peanut Brittle

Keep a close eye while you're cooking -as microwaves get more powerful, it's easy to burn this to a crisp ( Wink ).  You'll have to adjust the times to suit your machine, so the times listed are just guidelines.


1 cup sugar

1/2 cup white corn syrup

Mix, cook 4 minutes on high.

ADD:

1 cup salted roasted peanuts (I used cocktail peanuts)

Cook 3 to 5 minutes on high. (I do four but it depends on you microwave
wattage)

ADD:

1 Tablespoon butter

1 teaspoon vanilla

Cook 1 minute on high

ADD:

1 teaspoon baking soda

Stir well, pour on greased baking sheet. Spread if needed. Cool, break
into pieces. Enjoy!!
