Chicken Salad
« on: April 28, 2006, 03:58:46 PM »

This is my very favorite Chicken Salad recipe.  It's wonderful to serve for a group, as all your prep is done ahead of time.  It's especially nice for a Ladies Luncheon.  All the info at the bottom was there when I got the recipe, so I just copied it on too.

                                      Deluxe Honey Almond Chicken Salad

                        4 c. cooked chicken, cubed                             ¼ c. sour cream
                        1 ½ c. green grapes, halved                            2 T. honey
                        1 c. slivered almonds                                       1 t. poppy seeds
½ c. mayonnaise                                              pepper to taste

Combine chicken, grapes and almonds.  Set aside.

Stir mayonnaise, sour cream, honey and poppy seeds to blend well.  Add to chicken.  Toss well to coat.

               8-10 servings

                     167cal. per serving
                             12g protein
                             10g fat
                             8g carbohydrate
                             34mg sodium

It really does sound good.  It's similar to a chicken a fruit salad I like and I think I'm going to take some of your's and incorporate it in mine.  If I can ever find my actual recipe again.  I wonder if Phatz has a copy?  It has chicken and shrimp and grapes, cantalope, and bananas in it.   I think the addition of the nuts and poppy seeds would be wonderful!
