anyone have a good recipe they like?  i've been wanting to make it, and chicken leg quarters were on sale for 49 cents a pound, so i bought a pack.

I have several recipes and they seem pretty similar to that one.  None have Italian sausage but that sounds kind of good to me - a few have chorizo.  Most have some saffron, most add peas, and most have sliced green olives.  It looks like it's one of those things for which everyone has their own recipe.

How did it come out, Linda?  And could you replace the sausage with something else? (I get amazing heartburn w/ sausage... so I really can't, particularly in the evening.)   I assume the fat from the sausage isn't really needed (given the chickenfat), but that it's used for flavoring--so I should be able to omit and use address any flavor shortcomings another way?

What do you all think?

it came out pretty good.  i think i used too much olive oil.  you almost don't need any, because of the skin/fat on the chicken.  i used beer, not wine.  it makes a TON of rice, i could have doubled the amount of chicken.  i think you could skip the sausage easily. 

dh liked it.  calvin (the 6 year old) loved the chicken, not the rice.  caleb (10 years old on monday!) wasn't crazy about it.  he said it was just ok.  the baby liked it.  overall, i think my crew would prolly give it 3 out of 5 stars.  they liked it, but they wouldn't be super exicted to have it again.
