Herb baked chicken

I made this last night -stole it from the back of a box of Hungry Jack instant mashed potatoes.  I was in a bind....  Roll Eyes

Anyway, it's great! 

It's not exactly the fare you'd feed your mother-in-law; but for a quick, simple, appetising meal it's good.

2/3 cup instant mashed potatoes
1/3 cup grated parmesan cheese
2 tsps parsley flakes (optional)
3/4 - 1 tsp garlic salt
1 (3 - 31/2 lbs) cut-up frying chicken, skinned if desired (I used boneless chicken breasts)
1/3 cup margarine or butter, melted

1) Heat oven to 375F. Grease or line with foil and grease 15x10x1" baking pan or 13x9" pan.

2) Combine potato flakes, parmesan cheese, parsley flakes and garlic salt in medium bowl; stir until well mixed.  Dip chicken pieces in margarine, roll in potato mixture to coat. Place in greased pan.

3) Bake at 375F for 45 - 60 minutes or until chicken is fork-tender and juices run clear.

It says four servings...but for us it was about 6.

That's one of my secret passions.  Instant mashed potatoes.  The shame!  Grin

How do you know? If I remember correctly, the last thing I fed my mother-in-law contained a box of Ex-Lax.
