Zucchini Soup

Zucchini Soup

1 - 2 Tbsp    oil
1                 onion - diced
3                 cloves of garlic - diced
2 - 3            small zucchinis,sliced in half
                   length wise - sliced
1                 tomato,skin removed - diced
1/4 tsp         curry powder
1                 Knorr beef bouillon cube
                   salt to taste
                   boiling hot water

Heat the oil in a large sauce pan,saute onions and
garlic a couple of minutes.Add the zucchinis and
tomato,saute another couple of minutes while stirring
until hot.Add curry powder and salt,stir.Add just enough
boiling hot water to cover the zucchinis,add the bouillon
cube,stir.Cover the sauce pan,cook soup about 10 - 15
minutes until zucchinis are almost tender.

Puree soup in a blender.
(I use a hand held blender and puree
the soup in the sauce pan).
Reheat the soup,if too thick add a bit more boiling hot
water.Add more spices if needed and serve.
Enjoy.
