Ice Box Pickles

Ice Box Pickles

1 - 1 gallon    ice cream pail with lid
5 lbs(about)   pickling cucumbers - sliced
2                  onions - thin sliced

4       cups     white pickling vinegar
4       cups     sugar
1/2     cup     coarse pickling salt
1/3  tsp         turmeric
1 1/3  tsp      celery seeds
1 1/3  tsp      mustard seeds

Fill ice cream pail with sliced pickling cucumbers and onions.
In saucepan combine vinegar,sugar and spices.
Bring to a boil while stirring.Cover saucepan and boil for 1 minute.
Pour over the cucumbers and onions in the ice cream pail.
Let sit on counter,stirring several times until cold.Cover with lid and
place in fridge.Stir once or twice a day for about a week.
The ice box pickles will keep for a few months in the fridge.
