bacon, apple and cheddar frittata
The problem with writing “recipes” for things like this is that I don’t actually measure anything. Frittatas are basically crustless quiche or fancy pants omelette, depending on your perspective. You can put pretty much anything you like in them. The apple gives this frittata a really nice sweet/tart punch.

1 to 2 tablespoons each finely minced onion and celery
6 to 8 slices of bacon, cooked and coarsely chopped (I use precooked)
1/2 to 1 cup freshly shredded sharp cheddar cheese
1 mediumish tart apple, peeled and chopped
6 to 8 eggs, beaten senseless
splash of milk
a good couple shakes of dried sage
freshly ground pepper to taste
Okay, that’s pretty darn exact so far, right?
Preheat oven to 350F (177C). Have all ingredients chopped and ready to go, beat eggs and milk together with ground pepper. Fancy matching prep bowls are optional.
In a 10 inch (if that’s what you have) non-stick skillet, spray with non-stick spray or use a tiny bit of olive oil, saute finely diced celery and onion for a couple minutes. Sprinkle with a bit of dried sage. Add bacon and cook another minute or two. Add apples and stir with the bacon and veggies. Sprinkle cheddar on top of apples and stuff. Carefully pour egg mixture over everything. Cook for a couple minutes on stovetop. Mix egg mixture and apples and cheese and bacon lightly with spatula, press filling down.
Transfer to preheated oven (Make sure ahead of time your nonstick pan is oven safe). Cook until set. This usually takes 20 to 30 minutes. The apples make the mixture a little more wet than other frittata mixtures. Feel free to turn the broiler on and finish the bottom. Carefully remove skillet from oven and push a little of the middle of the frittata apart so you can peak and make sure it’s done. No one will ever see.
If it’s all set, place a plate over the skillet and really, really carefully flip skillet and plate over. The frittata should pop right out. Cut into wedges and serve with a nice crusty bread or hashbrowns. Or whatever you like. Serves 4-8 people depending on how hungry they are.
