Freddie's Green Rice
« on: April 05, 2006, 10:10:14 AM »

I try to name recipes in my book after the people who gave them to me.  At least I do now.  I have a number that I look at and think, "Who was that again?"

2 whole poblano pepper, roasted, peeled and seeded
2 whole green chiles, roasted,  peeled and seeded
1 small onion, chopped
1 clove garlic
1/2 cup cilantro, fresh
1/2 cup fresh parsley
4 cups chicken broth
2 cups rice

1.   Blend peppers, onion, garlic, parsley, cilantro with 3/4 cup broth til smooth

2.   Lightly brown rice in 2-3 tablespoons olive oil, add blended stuff, cook 2 minutes. Add remaining broth, cook covered 20 minutes. Let set 5 minutes.
