Sugarless Fruitcake

Sugarless Fruitcake

1    Tbsp     rum ( optional)
1      c        golden raisins - chopped

8      tsp     powdered sugar substitute
1/3    c       orange juice
1       c       fresh cranberries - chopped


1 1/2 c       nuts - chopped
1       c       unsweetened flaked coconuts
2     Tbsp    grated lemon peel
1 1/2  c       flour
1      tsp      baking soda
1/2   tsp      salt
1/2   tsp      nutmeg
1/2   tsp      cinnamon
1      tsp      allspice ( optional )

1      c         unsweetened pineapples - crushed

Soak raisins in rum for 1 hour.(Optional)
Mix sugar substitute with orange juice,pour over
cranberries,let sit on counter for 1 hour,stirring often.

In large bowl,mix the raisins,nuts,coconut,lemon rind in
flour until well coated.Add cranberries and orange juice
mixture.Sprinkle baking soda over mixture and mix.Mix
in all the other spices.Fold in crushed pineapple.Pour into
a very well greased (Pam) 9 inch loaf pan.
Bake at 325 F for 40-50 minutes,(test with toothpick).
Cool on rack.
