Halloween Witches' Fingers

Halloween Witches' Fingers
This recipe will make five dozen cookies.

1 cup      butter,softened
1 cup      icing sugar
1            egg
1 tsp       almond extract
1 tsp       vanilla
2-2/3 c    flour
1 tsp       baking powder
1 tsp       salt
2 Tbsp     ground hazelnuts,(optional)
3/4 c       almonds,whole blanched
1 Tube    red food decorator gel

In a bowl,beat together softened butter,sugar,egg,
almond extract and vanilla.Beat in the flour,mixed with
baking powder and salt and the ground hazelnuts,(optional).
Cover and refrigerate for 30 minutes or longer.

Working with one quarter of the dough at a time and
keeping remainder refrigerated,roll heaping teaspoonful of
dough into finger shape for each cookie,(please don't form
fat fingers,dough will spread a bit as it bakes)Press an
almond firmly into one end for the fingernail.Squeeze in
center to create a knuckle shape,puff it out rather than
squeeze it in.
With a sharp knife,make slashes in several places to form
knuckle.Repeat with remaining refrigerated dough.

Place on a greased baking sheets about 1-1/2" apart,(dough
will spread a bit.)Bake in preheated 325F (160C) oven for
20-25 minutes or until pale golden.Let cool for 3 minutes.
Lift up almond,squeeze red decorator gel onto nail bed and
press almond back in place,so gel oozes out from underneath,
(I just paint the "fingernail" with the red gel.)
Remove from baking sheets and let cool on racks.
