Blackberry Cake

Blackberry Cake

1       cup    flour
3/4    cup    sugar
1/2    tsp     baking powder
1/4    tsp     baking soda
1/4    tsp     salt
1       large   egg,beaten
1/3    cup     buttermilk
1/3    cup     butter,melted and cooled
1/2    tsp      vanilla
1-1/2 cups    fresh blackberries (or raspberries)

Crumbs
1/2    cup       brown demerara sugar
1      Tbsp      soft butter
2      Tbsp      flour
Mix crumbs with fork and set aside.

Combine dry ingredients in a bowl.
In small bowl beat egg,buttermilk,cooled melted butter
and vanilla until smooth.Pour liquid into flour mix.Stir with
fork just until moist.Spread dough into greased 9" x 9" x 2" or
7" x 11" x 2" glass baking dish.Place one layer of blackberries
evenly on dough.Sprinkle with crumbs.
Bake at 375 F for about 35 - 40 minutes,(test dough with a tooth pick).
Cool on rack.

That does sound good.  I love berries!  I used to make hubby boysenberry pie.
