Peanut Butter Fudge

Peanut Butter Fudge

2 cups sugar
1/8 tsp. cream of tartar
pinch of salt
3/4 cup milk
1/2 cup peanut butter (crunchy is best)
4 tbsp butter
1 tsp vanilla

Mix sugar, cream of tartar and salt in a heavy saucepan. Stir in milk and mix well. Place over low heat and cook, stirring occasionally, until mixture forms a soft ball when a small amount is dropped into cold water. (Be sure not to scrape the sides of the saucepan when stirring, since this will stir sugar crystals into the mixture and keep it from becoming creamy.) While the mixture is cooking, butter a dinner plate and set it aside.

Remove from heat; stir in peanut butter, butter and vanilla. Beat until the mixture loses its gloss and begins to thicken. Pour out on buttered plate. When fudge hardens, cut into squares.
