Wonton Soup

1 package  wonton wrappers,about 60 - 70 wontons
1      lb.      lean ground pork
1               egg,beaten
2 - 4          cloves of garlic,minced or very finely chopped
1 - 2  tsp    fresh ginger,grated or very finely diced
1       tsp    corn starch
1/8    tsp    sesame oil
1       tsp    sesame seeds
1       tsp    salt
1/4    tsp    pepper
1/2    c       green onions,finely chopped
8       c       hot chicken or beef broth
                 large pot of salted boiling hot water
                 cookie sheet,lined with wax paper
                 extra wax paper

Place the lean ground pork into a medium bowl,add the egg,garlic,
ginger,corn starch,sesame seeds,sesame oil and spices.Mix well.

Cover work area of kitchen counter or table with a large piece of wax paper.
Lay out about 12 to 15 of the wonton wrappers at a time.
(To keep remaining wonton wrappers moist,please cover with plastic wrap.)
Place a teaspoon of the meat filling near the center of each wonton.Fold one
corner of the wonton wrapper over the meat filling,then fold opposite corners
of the wonton wrapper over and together,roll towards the remaining corner.
Place edge down on cookie sheet lined with wax paper.
Repeat until all wontons are wrapped.( It takes me about 20 minutes.)

Place wontons into boiling hot salted water,one at a time.Please stir slowly and
carefully with a wooden spoon a few times,(to prevent wontons from sticking
to the bottom of the pot).Bring wontons to a full boil.Reduce heat,cover and
simmer about 10 - 12 minutes.Stir carefully a couple of times.

Bring chicken or beef broth to a full boil,set aside.

Remove cooked wontons carefully with a slotted spoon,drain well.Place several
wontons into serving bowls,add some of the hot chicken or beef broth,garnish
with green onions and serve immediately.
