Chinese Style Fried Rice

Chinese Style Fried Rice

2       Tbsp   oil
4       cups   cooked cold white long grain rice,crumbled
1-1/2  cup    diced Chinese barbeque pork
1/2     cup    diced onions
1/2     cup    diced mushrooms
1        cup    frozen small peas
1/4     cup    chopped green onions
                  salt and soy sauce to taste

Saute onions in wok,add 1 cup of Chinese barbeque pork,green
peas and mushrooms.Carefully stir and cook until peas are hot.
Remove from wok and set aside.Clean wok,heat wok,add oil and
slowly warm rice thoroughly,salt to taste.
When rice is hot,add 1/2 - 1 Tbsp soy sauce,the onions,Chinese
barbeque pork,peas and mushrooms.Mix thoroughly and stir while
reheating.Place on platter and garnish with the remaining 1/2 cup
of Chinese barbeque pork and green onions.

My own version of fried rice is a bit different,
no measurements either. Wink
When I have left over cooked white long grain rice I cook a few
slices of diced bacon with onions and garlic in a frying pan.Heat
up the cooked rice in the microwave oven and add it to the frying
pan.While stirring I add about a cup of frozen small peas.Heat it
just until the peas are hot and salt to taste.Place the fried rice on
a platter and garnish it with green onions.
