Lemon Bread Pudding (Microwave)
1/4 cup melted butter
1/3 cup sugar
1 tsp lemon peel - fine grated
2 Tbsp lemon juice
1/3 cup golden raisins
4-5 slices thick sliced dry French bread - cubed
3 large eggs - beaten
1 cup milk
1/4 tsp cinnamon
In microwave safe glass dish mix first 5 ingredients
and toss with cubed French bread.
Mix beaten eggs with milk and pour over top of
bread mixture.Sprinkle with cinnamon.
Cook in microwave oven about 10 - 12 minutes,
depending on the wattage of your microwave oven.
Enjoy
Note:
I leave fresh French bread slices out on a plate to dry
overnight.I never liked bread pudding until I
tasted this recipe.
