Chicken Breasts with Mushrooms

Chicken Breasts with Mushrooms

4 T. butter
2-3 C. varied mushrooms, sliced
1.5 lb. skinless, boneless chicken breasts
All purpose flour
2-3 gloves garlic, minced
˝ C. tawny port
˝ C. chicken stock
˝ C. whipping cream

Melt 2T butter in skillet over med-high heat. Add mushrooms; sauté ~5-10 min till soft. Transfer to bowl (including juices).

Melt 2T butter in same pan. Season chicken with salt & pepper. Dredge in flour. Add to skillet. Sauté till cooked through. Transfer to plate.

Add garlic to skillet & sauté 1min. Add port & bring to boil, scraping up brown bits from pan. After a minute or two, add stock and cream. Boil till thickened. Return mushrooms to skillet; stir till heated through. Add chicken back to pan or place chicken in serving dish and pour sauce over it.  Serves 4.

This sounds very good.  It seems that it should freeze well.  I am cooking for one these days, so anything that has more than one serving needs to be frozen for later use.  I will definitely be trying this recipe.
