Microwave Peanut Brittle

I received this recipe from a very short-term member of Reality Cafe.  I tried it twice -burned the first batch to a crisp, as I have a high-power microwave.  But the second batch came out great.  Then, I found out my family doesn't like it -so I ate the whole batch.  Grin  I haven't made it since, as my waistline really doesn't need it. Smiley

Microwave Peanut Brittle

  1 cup sugar

  1/2 cup white corn syrup

  Mix, cook 4 minutes on high.

  ADD:

  1 cup salted roasted peanuts (I used cocktail peanuts)

  Cook 3 to 5 minutes on high.  (I do three but it depends on you microwave wattage)

  ADD:

  1 Tablespoon butter

  1 teaspoon vanilla

  Cook 1 minute on high

  ADD:

  1 teaspoon baking soda

  Stir well, pour on greased baking sheet.  Spread if needed.  Cool, break into pieces.  Enjoy!!

Very interesting!  The peanuts are usually added last - did they stay crunchy?

Yes; they stayed crunchy, and it was delicious.  Grin
