Pureed Spinach large pot of boiling hot water 1 bunch spinach leaves and stems,cleaned and washed 1 onion,chopped 2 - 3 cloves of garlic,fine - diced 2 Tbsp butter 1 Tbsp flour salt to taste
Cook the spinach in the boiling hot water,about 5 - 8 minutes. Remove the spinach with a large slotted spoon and drain well in a colander or large sieve.
Melt the butter on medium heat in a sauce pan,add the onions and garlic,cook and stir until onions are transparent and start to brown slightly. Add the flour,mix well and cook about a minute or so while stirring.Add the well drained spinach,cook and stir until mixed.
Pour hot spinach into a blender and carefully,( please leave the smaller blender lid open a bit so that the hot steam can escape ),and blend just until smooth.( I use a hand held blender in the large pot I cooked my spinach in ). Carefully pour the hot pureed spinach back into the pot and reheat while stirring on medium heat.Add salt to taste.
