Lazy Chili

You can certainly roast your own peppers and make your own salsa blend, cook your own beans, etc. Or you can do it all the easy way. Makes around 10 servings.

Ingredients

3 pounds ground chuck
1 medium onion
2 cloves garlic
1 can diced green chiles
1 tablespoon adobo sauce
1 chipotle chile canned in adobo
1 cup salsa, hot
3 cans chili beans in zesty sauce (ranch style with sliced jalapeños)
1/4 cup pickled jalapeno, sliced
Zaz’s Chili Powder blend to taste

Instructions

1. Brown hamburger with 1 tablespoon Chili Powder, add diced onions and cook until translucent. Add minced (or smashed) garlic toward end of browning. Drain well.

2. Add canned chiles with liquid, adobo sauce and minced jalapeno. Add more or less to your test. Start small and add.

3. Stir in salsa of your choice. The hotter the better. Oh, and add another tablespoon of Chili Powder to taste.

4. Stir in chili beans. I like the brand “Ranch Style” and their sliced jalapeno variety. Otherwise, add sliced pickled jalapeños to taste.

5. Let cook till hot and bubbly. Serve with shredded cheese and sour cream.

Nutritional Analysis

Calories - doesn’t acknowledge draining the fat off the hamburger - so hard to say
Carbs - 51 grams carbs in the whole pot
Protein - 253 grams protein in the whole pot
Fat - 292 grams fat - about 282 grams of the fat is from the beef, see why you should drain the beef really, really well? Only 10 grams of fat in the rest of the pot.

Zaz’s Chili Powder Blend

1 tablespoon ground cumin
2 tablespoons onion powder
1 tablespoon garlic powder
1 tablespoon ground oregano
1 tablespoon cayenne pepper, ground
1 tablespoon ground chile pepper (you can grind your own dried chiles if you can’t find ground chile - this is not the same as chili powder!)
2 tablespoons paprika
