Braised Red Cabbage

Braised Red Cabbage

1 1/2 - 2 lb. red cabbage,fine - shredded
1                onion,thin - sliced
1 - 2           garlic cloves,thin - sliced
1 tbsp.        butter or oil
2 - 3           large apples,peeled and thin - sliced
2 - 4 tbsp.   wine vinegar
1 tbsp.        sugar,optional
1 tsp.          salt,or to taste
1/4 tsp.       pepper,or to taste
1/8 tsp.       ground cloves
1 small         bay leaf

Blanche red cabbage in boiling water for 1 minute and
rinse in cold water.Drain.
Cook onion and garlic in butter or oil until soft,add apples,cook
for 2 - 3 more minutes.

In large bowl mix red cabbage with the spices,onions and apples.
Place in greased casserole dish and sprinkle
with the wine vinegar.Cover.
Bake in oven for 1 - 1 1/2 hours at 325 F
Carefully stir 2 - 3 times during baking time and moisten with a bit
of water if necessary.Remove bay leaf before serving.
